Jollof Chicken Pilaf

(Serves 4)

1½ cups basmati rice

6 tomatoes

½ kg small chicken pieces

Salt and pepper to taste

2 tbsp oil, divided

1" cinnamon stick

2 green cardamom pods

1 tej patta

2-3 green chilies, slit

2 onions, finely sliced

1 tbsp ginger-garlic paste

1 tsp coriander powder

1 tsp red chili powder

½ tsp cumin powder

½ tsp paprika

¼ tsp freshly ground black pepper

¼ tsp turmeric powder

1 tsp dried thyme

Salt to taste

A handful of fresh coriander and parsley leaves, chopped

2 cups chopped vegetables (carrot, green peas, green beans, potato)
